Peach + Burrata Sourdough Crostini

A Late-Summer Delight You’ll Want on Repeat

If you’re anything like me, you’re mourning the end of peach season. Nothing quite compares to the juicy sweetness of a perfectly ripe peach! If you’ve still got a peach or two available, may I suggest this little combo? This dish is summer on toast and it comes with a personal guarantee that it will change your life. It makes a great snack, a beloved appetizer to share at a party, or if you eat enough (and you’ll want to) it could totally pass for a meal.
Fresh sourdough makes a difference! Here’s my go-to hack: the shelf-stable sourdough loaves from Costco. I keep a few in the pantry for foodie emergencies — they stay fresh for months with no preservatives. Magic!
To start, preheat your oven to 400 degrees. Mix together the parmesan cheese, melted butter, minced garlic and black pepper and spread on the bottom of a baking sheet.
Slice your bread and place them in a single layer over the cheese mixture with a little room between each slice to ensure a good toast. To help crisp them up in the oven, brush the tops of the bread with butter. Arrange the prosciutto around the bread.
Now bake! It will take about 15 minutes for the bread to toast and the prosciutto to get crispy.
Once they are out, top them with the burrata, peach slices, crispy prosciutto, and some fresh basil.
Add some honey (or hot honey for a little kick) if desired!
Ingredients:
1 loaf sourdough
1/2 cup grated parmesan cheese
1 teaspoon minced garlic or 1 clove fresh
2 tablespoons melted butter
4 ounces prosciutto
8 ounces burrata cheese (easier to use at room temp)
2 sliced peaches
Fresh basil
Honey (or hot honey), if desired
Instructions:
1. Preheat oven to 400 degrees Fahrenheit
2. Mix together the parmesan cheese, melted butter, minced garlic and black pepper and spread on the bottom of a baking sheet. Place sliced bread in a single layer over the cheese mixture. Brush the tops of the bread with butter. Arrange the prosciutto around the bread.
3. Bake for about 15 minutes or until prosciutto is crisp and the bread is toasted.
4. Top with the burrata, peach slices, crispy prosciutto, and fresh basil. Drizzle honey on the top (hot honey is my fav on this!) Enjoy warm or at room temperature.
